Soup for the Soul: Chicken and Rice

Okay, fall is here and so is this magical soup! Honestly, I am not a big lover of making soup. I find that it takes hours and never tastes as good as getting it from a place (right?!) – until I made this Chicken & Rice soup. This is the perfect soup to curl up with on a cozy afternoon or a chilly night. It’s both comforting and clean. 

The best part about this is that there is minimal prep work (no need to prep a whole chicken) and I promise, it won’t take you 6 hours to make a darn soup. 

SInce prep work is minimal, once you get this delicious soup simmering on the stove you can sit back, have a glass of wine, pick up a new book, curl up on your couch while your house slowly starts to fill with the soothing scent of homemade chicken soup. 

Let’s get down to the good stuff, ingredients! They aren’t fancy and you probably have a lot of the ingredients already stocked up in your panty. 

Ingredients Needed

  • Boneless Chicken Breast (I use Organic, free range Butcherbox)
  • Olive Oil
  • Salt
  • Pepper
  • Garlic ( I used pre-minced from Trader Joes) 
  • Onion (I use pre-diced from Traderjoes)
  • Chicken Stock (or bone-in chicken broth, I use the trader joe’s organic bone-in chicken broth, you can find it in the refrigerator section)
  • Carrots
  • Long Grain Rice (I used Trader Joe’s organic Basmati rice)
  • Carrots
  • Celery
  • Fresh Dill
  • Fresh Spinach
  • Lemons
  • Dill Weed (for extra flavor) 

Ingredient Breakdown

  • 2 tbsp Olive oil
  • 2 onions, finely diced, about 4 cups (I use pre-diced from Traderjoes)
  • 6 Garlic cloves, minced 
  • 6 cups Chicken stock 
  • 6 cups Water
  • 2-3 lbs Boneless, skinless chicken breast (shout out to Butcher Box)
  • 2 cups Long-grain rice
  • Large carrots, peeled and sliced, about 5 cups (I always opt for more)
  • Celery ribs, diced about 5 cups
  • Generous amount of Salt (I’d suggest hymalian sea salt) 
  • Ground pepper
  • Lots of Fresh dill, roughly chopped
  • Dill Weed (not necessary, but a great addition)
  • 4 cups Fresh spinach
  • ¼ cup Lemon juice

Let’s do this

  1. Heat the olive oil in a large soup pot set over medium heat.
  2. Add the onion and sauté until translucent (about 3-5 minutes)
  3. Add the garlic, and sauté (about 2-3 minutes)
  4. Add all ingredients – broth, water, raw chicken breasts, dill weed, rice, carrots, celery. Bring to a boil and simmer for 30 minutes.
  5. Remove the chicken, shred it with 2 forks and place it back in the pot along with salt, pepper, and fresh dill.
  6. Simmer for 20 minutes.
  7. Stir in the spinach and lemon juice and simmer for 5 more minutes.
  8. Ladle yourself a nice size nourishing portion and enjoy!
